last week was our firing. we started the fire around 10 on friday morning and fired for three whole days until sunday. we first started by throwing mainly sugi (japanese cedar) with karin (chinese quince) and kokutan (ebony) as supplimentary wood.
先週は窯焚きでした。金曜日の10時に火を入れて、そこから日曜日までの3日間焚きます。最初は杉の木をメインに、カリンと黒檀も補助的に使いながらどんどん温度を上げて行きます。
by late afternoon, the tempurature of the kiln exceeded 500℃ and we further raised the tempurature over 1000℃ before midnight. by this time, the fire gets really powerful and your face feels so hot as if it was on fire, when you throw.
窯の温度も夕方5時頃には500度を超え、そこから更に温度を上げて夜中前には1000度を超え、この頃にはもう火の勢いが強く、薪を入れる時には顔が焼けそうに熱くなります。at the back of the kiln are shelves where our pieces are carried and in front of that is the "haikaburi" (ash-covered) area. at "haikaburi", the ember from the woods directly sticks the surface of the pieces and becomes the glaze. in the very front is a small space to throw wood pieces and by the end of the day, this space gets covered with ember.
窯の中は、奥が棚になっていてそこに作品たちが乗せられ、その手前は「灰かぶり」の場所。「灰かぶり」では薪が焼けた後の熾き(おき)が直接焼きものの表面にくっつき、釉薬となって仕上がります。手前の方は薪をくべるスペースがありますが、丸一日焚いた頃にはこの場所もすっかり熾きでいっぱいになります。
i had left the place around 2am, and from the second day, chestnut wood with a little bit of red pine were thrown, to keep the tempurature between 1200~1250℃ until the morning of day 3. after that, taking about 12hrs, the tempurature was gradually lowered to 1180℃ and the fire was stoped. this time, the highest tempurature was 1250℃ and so the way the pieces turn out may look a little different from usual. so this is how we take turns and fire our kiln for 3 days and nights.
私は今回は1日目の夜中2時くらいで失礼して、その後、2日目からは栗の木を中心に赤松を1割ほど混ぜてくべながら3日目の朝くらいまで1200~1250度を保ち、それから約12時間かけて1180度まで下げてから薪をくべるのをやめ火を落としたそうです。今回の最高温度はいつもより少し低い1250度で、また少し釉の付き方がいつもとちょっと違う仕上がりになるはず、との事でした。(先生メールでありがとうございました!)
こんな感じで約3日3晩、皆で交代しながら窯の番をします。
by night, it was totally dark around the kiln but it was as if the kiln god was vigorously doing his dance inside the kiln. i wonder what magic he casted to our pieces this time.
夜になると辺りも真っ暗。そんな中、窯の中だけはまるで窯の神様が激しく舞いを舞っているよう。今回は窯の神様、どんな魔法をかけてくれたかな??

we always have potluck at our firing and enjoy the different dishes infront of the kiln. this time the dishes were; beautiful chirashi zushi (sushi rice topped with egg, seafood, and vegetables) by kitagawa-san, tomoko-san's warm oden (vegetables, fish dumplings, and other ingredients stewed in thin soy soup) and homemade pickles, shino mama's spicy chili beans, and my gapao rice and grilled pork and chicken with umeshu (plum liquor) sauce.
窯焚きの時はいつも皆でご馳走を持ち寄り窯の前で美味しくいただきます♪今回のメニューは;北川さんちの美しいちらし寿司、ともこさんの暖かおでんと自家製ピクルス、しのママのスパイシーチリビーンズ、そして私のガパオご飯と豚とチキンの梅酒ソースでした。

this gapao rice is what i always order at monsoon cafe and had tried making some at home.
here's the recipe:
ground meat++250g
chicken soup stock++1.5tbs
water++100~150cc
chinese dark soy sauce++1tsp
oyster sauce++1tsp
golden mountain seasoning sauce++2tsp
stir fry fine cut garlic and add gound meat (pork or beef). add water and all the seasoning and let it cook until almost all the soup is gone. mix in thinly cut green peppers and fresh basil leaves a little before stopping the fire.
このガパオご飯はモンスーンカフェに行くといつも食べるもので、自分でも作ってみたい!と試行錯誤の上何とかそれに近いものに・・・
作り方は:
ひき肉++250g
鶏がら++大さじ1.5
水++100~150cc
中国たまり醤油++小1
オイスターソース++小1
ゴールデンマウンテンのシーズニングソース++小2
ニンニク2片のみじん切りを炒めた所に豚(or牛)ひき肉を入れて炒める。ある程度炒めた所に水と調味料全部を入れて汁気がなくなるまで炒める。火を止めるちょっと前に細切りピーマンと手でちぎったフレッシュバジルを入れて軽く炒め合わせる。this is salt and peppered pork and chicken with umeshu butter sauce.
how to make the sauce;
butter++10g
water++50cc
1 minced umeboshi(pickled plum)
1 minced ume pickled in umeshu
umeshu++50cc
soy sauce++25cc
sugar++1/2tbs
ground black sesame++2tbs
ichimi togarashi (powdered red chili pepper)
just add all the ingredients to melted butter
そしてこれが塩コショウして焼いた豚肉と鶏肉に梅酒バターソースをかけたもの。
ソースの作り方は;
バター++10g
水++50cc
梅干++1個(たたく)
梅酒の梅++1個(たたく)
梅酒++50cc
しょうゆ++25cc
砂糖++大さじ1/2
黒すりゴマ++大さじ2
一味唐辛子++少々
バターを溶かしたところに残りの調味料を入れて煮詰めるだけ!
the following day, on saturday were more people and more food. this is what it looked like; the casserole in front is whole cabbage cooked in a dutch oven. i see other tastey looking dishes too!!
翌日、土曜日は人も増え、それと共にお料理の数ももっと増え。こんな感じだったそうです。
手前のナベはミドリオバケパパ力作のダッチオーブンで作ったキャベツの丸ごと煮だそうです。その他、お稲荷さんらしきもの、黒豆サラダらしきもの・・・なんだかどれも美味しそう~(誰が何作って来たの!?おせ~ておせ~て!)
so, we always have a very posh potluck party at our firing, and the food always tastes great since everyone is a great cook!
窯焚きの時はいつもこうやって豪華なお料理祭りも繰り広げられます^^皆さんお料理もほんっとに上手だからいつもお料理も楽しみです♪♪
